Fermentation Tanks at Cruzan Rum

The fermentation tanks at Cruzan Rum are large vats that hold molasses, water and yeast and are the beginning of the rum making process.

Definition: A process that uses yeast to break down sugar molecules into carbon dioxide gas and ethyl alcohol. This chemical change is achieved because the yeast rapidly reproduces itself in any solution that contains sugar.
