When it's too hot to cook, there are still plenty of fantastic tea sandwich recipes you can use for afternoon tea or a light lunch. Here are some of my favorite summertime tea sandwich recipes:
- Cucumber tea sandwiches like these Cucumber & Mint Tea Sandwiches are cooling and light additions to summertime afternoon tea meals.
- Like cucumbers, radishes can be a cool and refreshing base for tea sandwiches in summer. I recommend these recipes for Buttered Radish Tea Sandwiches and Radish & Goat Cheese Sandwiches.
- Basic Watercress Tea Sandwiches feature a seasonal, crisp, peppery green for a summery flavor. Similarly, Watercress Egg Salad Finger Sandwiches (pictured above) lighten traditional egg salad finger sandwiches with watercress.
- A quintessential summertime ingredient, good quality tomatoes are fantastic in simple-yet-delicious finger sandwiches. Highlight the taste of fresh, ripe tomatoes with Herbed Butter & Tomato Finger Sandwiches, easy Tomato & Cheese Finger Sandwiche or Tomato & Sour Cream Finger Sandwiches.
