Pineapple Mojito

This Pineapple Mojito is the brainchild of Martin Sadlemire at the Wequassett Resort in Chatham, Massachusetts. It is an simple and interesting variation of the time tested Mojito. In the new cocktail Sadlemire added both fresh pineapple and pineapple juice, which gives it a tart and far more tropical taste that is backed up by a fine aged rum from Brugal. From a Mojito-lover's stand point this is a fantastic rendition and it's easy to offer guests the option of the original, this pineapple, or another fruity Mojito.

Preparation:

  1. Muddle the pineapple, lime, and mint in the bottom of a cocktail shaker.
  2. Fill the shaker with ice and add the other ingredients.
  3. Shake well and strain into a highball glass filled with fresh ice.
  4. Garnish with a sprig of mint.
